| در این پژوهش، اثر بازدارندگی عصاره‌های شیرین‌بیان و برگ گیاه نیم و ژل آلوئه ورا بر رشد کپک آسپرژیلوس نیجر جدا شده از رطب مضافتی و نیز کنترل پوسیدگی در میوۀ مضافتی بررسی شده است. فرآورده‌های گیاهی در غلظت‌های مختلف (0.1، 0.5 و 1 درصد برای عصاره‌های شیرین‌بیان و برگ گیاه نیم و 0.25، 0.35 و 0.50 درصد برای ژل آلوئه ورا) به‌طور جداگانه به محیط کشت سیب‌زمینی دکستروز اضافه شدند. دیسک‌هایی از قارچ به قطر 7 میلی‌متر به مرکز پتری‌های حاوی عصاره گیاهی انتقال داده شدند؛ پتری‌ها نیز در گرمخانه در دمای 25 درجه سلسیوس قرار داده شدند. روزانه رشد قطری قارچ بر حسب میلی‌متر اندازه‌گیری شد. بین عصاره‌های گیاهی و غلظت‌های مورد استفاده در جلوگیری از رشد کپک آسپرژیلوس نیجر اختلاف معنی‌داری در سطح احتمال 1 درصد وجود داشت. اثر بازدارندگیعصاره شیرین‌بیان روی رشد قارچ آسپرژیلوس نیجر به‌طور معنی‌داری بیش از اثر بازدارندگیعصاره برگ گیاه نیم و ژل آلوئه ورا بود. غلظت بالای عصاره‌ها نیز اثر بازدارندگی بیشتری روی رشد کپک آسپرژیلوس نیجر در محیط کشت داشت. عصاره شیرین‌بیان در غلظت 1 درصد بیشترین کاهش را در رشد قارچ آسپرژیلوس نیجر نشان داد و نیز در کنترل پوسیدگی در رطب مضافتی مؤثر بود. عصاره ریشه شیرین‌بیان طعم و مزه خاص و قابل تشخیصی را در رطب مضافتی ایجاد نکرد و از لحاظ صفات حسی (طعم و مزه، وضعیت ظاهری، قابلیت پذیرش کلی) امتیاز بیشتری توسط گروه ارزیاب دریافت کرد. | ||

Study of the Effect of Aloe vera Gel, Neem Leaf and Licorice Extracts in Controlling Aspergillus Niger in Mazafati Rutab

In this study, inhibitory effects of plant products (Licorice root and Neem leaf extracts, Aloe vera gel) on Aspergillus niger growth isolated from Mazafati fruits and control of this mold in Mazafati fruit were studied. This mold was isolated from rotten Mazafati fruits. Plant products were added to melted potato dextrose agar medium in different concentrations (0.1, 0.5 and 1% for Licorice root and Neem leaf extracts and 0.25, 0.35 and 0.50% for Aloe vera gel). Plates containing the plant products were inoculated with fungi discs (7mm diameter) and incubated at 25°C ± 1. The diameter of fungus colony (mm) was measured daily. There was significant difference (P < 0.01) among the plant extracts and also their concentrations in preventing Aspergillus niger growth. The results showed that inhibitory effects of Licorice root extract on Aspergillus niger growth were significantly more than that of Neem extract and Aloe vera gel. High concentration of the extracts had also more inhibitory effect on the mold growth. The Licorice root extract at 1% concentration showed more reduction in the growth of Aspergillus niger and also was effective on control of rot in Mazafati rutab. The Licorice root extract did not make any special taste in Mazafati rutab and obtained the more score in the sensory attributes (taste, appearance, acceptability).
