| در این بررسی، اثر عصاره نعناع (Mentha spicata L.) در غلظتهای 5/0%، 1% و 2% بر باکتری لیستریا مونوسیتوژنز (Listeria monocytogenes) در پنیر نرم پاستوریزه که به هر گرم آن 106 سلول باکتری اضافه شده بود، در دماهای 7 و 15 درجه سانتی‌گراد و در یک دوره زمانی 15 روزه مطالعه شد. در دمای 7 درجه سانتی‌گراد، لیستریامونوسیتوژنزپس از 15 روز در تمام غلظتهای بکار برده شده، کاهش 2 و 3 لگاریتمی را در پی داشت، ولی در دمای 15 درجه سانتی‌گراد عصاره با غلظت 5/0% تنها یک لگاریتم کاهش در تعداد جمعیت باکتری نشان داد. اثر آنتی لیستریایی عصاره 1% و 2% نعناع در 15 درجه سانتی‌گراد بیشتر از 7 درجه سانتی‌گراد بود. نتایج بدست آمده در این مطالعه نشان داد که Mentha spicata دارای خاصیت ضد لیستریایی می‌باشد. | ||

| Natural preservatives usage in food has attracted more consumers nowadays. In this investigation, the effect of mint (Mentha spicata L.) essential oil (0.5%, 1%, 2% v/w) on Listeria monocytogenes in pasteurized soft cheese inoculated at 106 cfug –1, at 7oC and 15oC for a period of 15 days was studied. At 7oC listeria monocytogenes after 15 days in all concentrations declined 2 to 3 log, but at 15oC with 0.5% extract only 1 log decline was observed. Concentrations of 1% and 2% Mentha spicata had more bactericidal effect on Listeria monocytogenes at 15oC. The results obtained in this study showed that Mentha spicata has antilisterial activity. | ||
