| چکیده | ||
| اثر ضد قارچی اسانسهای آویشن شیرازی (.Zataria multiflora Boiss) و آویشن کرکی (Thymus eriocalyx (Ronniger) Jalas) از طریق مهار رشد قارچ آسپرژیلوس پارازیتیکوس NRRL 2999 مولد آفلاتوکسین بررسی شد. کمترین غلظت مهاری (MIC) و کمترین غلظت قارچ‌کشی (MFC) و سنیتیک مرگ میکروارگانیسم نسبت به اسانسهای فوق اندازه‌گیری شد. اسانسهای فوق توسط گاز کروماتوگرافی (GC) و گاز کروماتوگرافی متصل به طیف سنج جرمی (GC/MS) آنالیز شدند تا ترکیبهای اسانسهای مؤثر بر مهار کامل رشد قارچ فوق بدست آید. اطلاعات گاز کروماتوگرافی و گاز کروماتوگرافی متصل به طیف سنج جرمی نشان داد که اسانس Thymus eriocalyx از 18 ترکیب و اسانسZataria multifloraاز 22 ترکیب تشکیل شده‌اند. این دو اسانس از نظر دارا بودن هشت ترکیب آلفا-پینن، آلفا-توژن، تیمول، سیس سابینن هیدرات، پارا-سیمن، 1،8-سینئول، میرسن و سابینن یکسان بودند. نتایج حاصل، حاکی از قدرت فوق‌العاده اسانسهای فوق به عنوان ترکیب قارچ‌کش قارچ مولد آفلاتوکسین و نگهدارنده ایمن مواد غذایی بود. | ||

| The antifungal properties of Zataria multiflora Boiss. and Thymus eriocalyx (Ronniger) Jalas essential oils were studied on growth inhibition of Aspergillus parasiticus NRRL 2999. Minimal inhibitory (MIC) and fungicidal (MFC) and kinetics of fungal spore death as a result of exposure to the oils were studied. The oils were analyzed by GC and GC/MS and their chemical components were identified. 22 and 19 compounds were identified in Zataria multiflora Boiss. and Thymus eriocalyx (Ronniger) Jalas essential oils respectively. Eight compounds viz; α-thujene, α-pinene, sabinene, myrcene, p-cymene, 1,8-cineole, cis sabinene hydrate and thymol were common in both oils but in different concentrations. The results indicated powerful antifungal properties of both oils inhibiting growth and aflatoxin production that could be applied to food as preservatives. | ||
